We had zucchini and yellow squash in our Foodshed Farm box on Friday. My family loves this simple recipe and it makes good use of the beautiful vegetables in our box. 

Rocky settled in for a cool nap. 

it is getting hot in Arkansas

Start with 2 or 3 squash. I like to use yellow squash and zucchini. Spray the foil-lined baking sheet with olive oil. Thinly slice the squash and put on pan in a single layer. 


Lightly spray with olive oil and season with salt and pepper. 

Bake at 450 degrees for 20 minutes. Remove from oven and sprinkle cheese on top or cut block cheese into small squares and place on top of the squash. My favorite is mozzarella but I like cheddar and Parmesan, too.  


Return to oven for about 10 more minutes or until cheese is bubbly and begins to brown on top. 

Remove from oven and let cool slightly. As they cool, they will become more chip like. 

These are so good that I can’t even snap a picture before someone starts eating them… Much less try to arrange them on a beautiful plate so this will have to do. 


Serve immediately or just stand back and watch them disappear. 💕
