morning in central Arkansas

My Foodshed Farm boxes just keep coming filled with vegetables and herbs. Some of these I am unaccustomed to using much. Fresh basil is one of those. I received a bunch of basil last week and I have used it several times this week, gave some to my mom, and I still have a lot. I came across a recipe for basil pesto from Natural Things Food Store and I thought I would try it. (She also receives a Foodshed box and shares recipes using items from the box every week.) I have tweaked it some and this is the result. 

Basil Pesto

1 bunch of basil leaves

1/3-1/2 cup olive oil

2 T. walnuts

1/4 c. Parmesan

1 clove fresh garlic

1/2 t. salt

Blend all together until it forms a thick paste. 


I spread it on a slice of homemade sourdough bread, put a slice of a tomato and a slice of fresh mozzarella cheese on top. It was delicious. 

This is the mozzarella I used. I found it in the deli section of my grocery store. 



You can also put pesto on pasta or top your chicken or beef with it.
